When writing about BBQ in the Carolinas, it is extremely challenging to say one is “the best”. Everyone has certain criteria when judging their favorite BBQ and really, it is all dependent on where you where born.
Sauceman’s BBQ, located at 228 West Blvd. (in historic South End), offers a BBQ variety entitled “Lexington style”. Lexington BBQ uses only pork shoulders and it is served with a sweet (and sour) sauce that is made from apple cider vinegar, tomatoes and sugar. It certainly is a flavor indigenous to the Piedmont area of NC.
The way the pitmaster (Zach Goodyear) at Sauceman’s prepares the pork shoulder is really a work of art. The pork is smoked for twelve hours over oak and hickory to bring out the flavor and tenderness of the meat. It is then chopped to create the plates and sandwiches. The dip is on the table and is optional for folks not wanting to drown out the taste of the meat. The sandwiches offered come in ten varieties. Yes, ten! Each sandwich can be ordered as a burger, or pork, turkey, chicken or veggies. The menu has been pared down to only include Goodyear’s top items which include sandwiches, burgers and salads plus on the weekends he also includes ribs and, at times, a very popular low country boil.
If you are looking for a BBQ style that is truly native to the Charlotte-area, look no further than Sauceman’s. And please, be sure to try the pork!
