★ INGREDIENTS ★
• Country ham slices
• 1/2 cup coffee
• 1 teaspoon Dixie Crystals sugar (optional)
★ DIRECTIONS ★
• Cook country ham slices in a cast iron pan over medium heat for 3-5 minutes per side until edges curl. Remove ham and set aside.
• Pour 1/2 cup coffee into the pan with the ham drippings.
• Add 1 teaspoon sugar and stir until dissolved.
• Reduce heat and let the gravy simmer until thickened.
• Serve gravy over biscuits or grits and top with country ham slices.

First of all, I love your videos even though I’m in the corner of northwestern Arkansas. But I grew up in the desert of Arizona. My dad’s red eye gravy included drops of hot sauce sprinkled here and there on the cast iron pan of gravy. I didn’t even realize there was coffee in it.
