Partnering on most real estate transactions, Amy and Terra are also close friends outside of the office! Although it seems a rare find these days, Amy and Terra are both natives to the Carolinas! This dynamic duo resides just over the border in South Carolina (Amy in Tega Cay and Terra in Fort Mill) and have become self-proclaimed experts in local area cuisine. When asked what’s on their ‘must have’ list while in Charlotte, without hesitation they agree Viva Chicken is one of them! Peruvian style chicken originated in Lima, Peru (who would have guessed?!) back in the 1950’s. This dish traditionally includes ¼ chicken (bone-in), charcoal-grilled with lots of traditional Peruvian spices (think spicy!), served with fries and salad. This dish is also served with a variety of creamy sauces (for dipping), most commonly ‘aji’ – a spicy chili cream sauce. Since becoming popular in the US (a 2013 study showed Peruvian food to be one of the hottest 3 foods in the US), this dish has continued its’ traditional makeup of bone-in Peruvian rubbed charcoal chicken, fries, and salad; although the creamy sauces that accompany it vary greatly from one eatery to the next.
