Nea-what-a?! (Confession: I had never heard of it, and didn’t know what I was missing until I had it for myself.) Made from simple and fresh ingredients, this pizza is an Italian staple. A basic dough, raw tomatoes, fresh mozzarella, fresh basil, and olive oil – that’s it! What makes this pizza stand out is the sauce to cheese ratio, having much more sauce than cheese. This ratio leaves the middle of the pie a little soggy so you’ll typically see it served as a personal pan pizza – no slices here!
